The Definition and Origin
The word FUSION originates from the Latin word ‘fuse’, which means ‘to mix’. The word was first used when Caucasian jazz musicians blended jazz with rock and pop along with many other parts and elements of music to make ‘fusion music’ in the 70’s. So this word, ‘fusion’, was used to introduce a new style of food that mixed ingredients and methods used across different continents and cultures. In France they call it ‘Nouvelle (New) Cuisine’ in a sense that it is a new style of food. Some people call it ‘New Wave Food’ to emphasize the fact that it’s a new trend and others call it ‘Multi Culture Food’ considering its distinctive feature.
Fusion Cuisines, though its general meaning is food with mixed ingredients and recipes, can also be understood as the cuisines developed in California, USA. This is because fusion cuisine recipes first came on the menu in the 80’s in restaurants in California. In the 80’s the population of Asian Americans and Latin Americans was rising and Americans’ interest in healthy diets was increasing as well. This led people to prefer Oriental cuisines which uses abundant amount of vegetables and various recipes to satisfy peoples taste. So many Asian Americans who settled in California adapted Chinese or Japanese style cuisines into Western style cuisines making the most of both cultural dishes.
