Standard Purchase Specifications
a purchase specification is a concise description of the quality, size, weight, count, and other quality factors desired for a particular item. the specified factors should be described in sufficient detail to properly guide receipt of the desired merchandise.
Standard purchase specification should be established by management based on the needs of the menu and the operation's merchandising and pricing policies. once developed, they should be given to the purchasing agent, the property's purveyors,
and the receiving clerk. In this way, all of the parties involved in ordering, supplying, and receiving will have the necessary written guides to permit the operation to obtain, on a consistent basis, the quality and kind of food and beverage merchandise desired.
in addition to providing a knowledge of what is required by the operation standard purchase specification offer several other advantages.

Advantages of purchase specifications
- They mat lead to fewer products being required. Analyzing the menu may suggest way to duplicate product use so that fewer items need to be purchased.

Disadvantages of purchase specifications
Are there disadvantages to the use of standard purchase specification? the development of specifications does involve time and effort. time is needed to create the specifications and then to monitor the need for any changes as the operation's business evolves. Furthermore, their use will create increased duties for the receiving staff. Finally, since specifications establish the minimum quality expected, they may , over time, become the maximum quality which will be purchased.
