- Bakery Industry Bakery industry : Window bakery, Franchise bakery, In-store bakery


1. Classification of Bakery industry

(1) Window Bakery
Window bakery is where workforce is below 10. We can also devide it into large-sized, middle -sized and small sized bakery according to the number of the workforce. The large-sized and middle -sized bakery produce and sell a large variety and amount of products and the small-sized bakery deals with less variety and a small amount of products.

(2) Franchise Bakery
Franchise means to sell licences for people to trade using a brand name instead of paying a royalty. Then, the franchise bakery can use the brand of franchiser under license and get a right to run a business. It also could get some special supports or controls from the franchiser. There are lots of bakery brand such as Tousles jours, Paris baguette in Korea.

(3) In-store bakery
It is a bakery in large stores such as a big supermarket, department store where bread is baked fresh for the customers. The number of in-store bakery is increasing and have been showing a steady increase in its sales revenue. It is expected to grow continuously and it would have a significant effect on other types of bakery.
